Beef Stir Fry

Beef and Vegetable Stir Fry

This recipe can be adapted to a variety of Stir Fry dishes. A good wok and nice hot gas elements are ideal. It is important not to overcook the ingredients and to be hearing them sizzle as you cook.
Once your ingredients are ready only a few minutes is required to cook this.

Ingredients

  • 300 gms Beef sliced thinly (or Prawns)
  • Beef Stock
  • Oyster Sauce
  • Carrot Sliced
  • Celery Sliced
  • Onion Diced
  • Red Capsicum
  • Ginger minced
  • Garlic cloves minced
  • Any Asian style vegetables
  • Fresh Basil Leaves
  • Cornflour
  • Black pepper
  • Olive Oil
  • Sesame Oil
  • Optional Fresh Chilli
  • Optional marinate beef in sesame oil, garlic, ginger and a dash of curry powder

Method
Everything here is to taste so experiment and find what suits you.
Start with a very hot wok to a sliver of olive oil (only add oil immediately before meat) brown the meat then remove (don't over cook it).
Add Onions, Carrot, Cellery, Capsicum, Ginger to hot wok - then add Garlic then add Oyster Sauce, Beef Stock and a dash of Sesame oil and Meat.
Mix cornstarch with a little Beef Stock to thicken the sauce when just about ready to server throw in the Basil.
This all takes practise because the meat needs to be just cooked and the vegies crisp and the Basil not over done.
Alternatively substitute Green Prawns for Beef as pictured and use either fish stock or vegetable stock.
